
Mexican lentil tacos
This is one of my family favourite recipe with lentils. It's healthy vegan meal that taste so good and also filling.
I like to serve it soft or hard tortilla, guacamole, tomatoes and parsley or lettuce
2 tsp Oil
1 Thinly sliced ​​onion
2 Crushed garlic cloves
2 ½ cups Cooked brown lentils
3 tbsp Tomato paste
2 tbsp Spicy chili sauce (optional)
2 tbsp Chili powder
1 tsp Cumin
½ tsp Ground coriander
1 tsp Dried oregano
½ tsp Salt

In a small bowl, mix spices: 2 tablespoons chili powder, 1 teaspoon minced cumin, half teaspoon ground coriander, half teaspoon dried oregano and half teaspoon salt.

Heat a non-stick frying pan, fry the onion with the oil for 2 minutes then add the garlic. Half a minute later, add the ground spice bowl and stir.

Remove to medium heat, add the lentils and a tablespoon of water. If still very dry you can add another tablespoon

Add the tomato paste and the spicy sauce (optional) and start mixing and mashing the lentils.

Add the mixed spices. Cook for about 5 minutes and if needed - (add some water if needed!)
